Enjoying a nice variety of wines at the local Whole Foods establishment for their Friday night wine sampling, my companions and I decided that we wanted some nice cheeses to go along with the festivities. After looking through the selections, I came across one that was familiar to me and previously recommended by other friends. Deciding to go with their suggestions, I chose the Catamount Hills Cheese which turned out to be a huge crowd pleaser. Everyone in the group quickly devoured the wedge and hurried to procure another for further consumption. The cheese reminded me of a cheddar with superpowers, reminiscent of a salty Parmesan and savory Swiss. These two flavor profiles combined with the suggestive tang of a Cheddar created quite an amazing addition to our makeshift cheese plate which also contained a Cotswold, flax crackers, and sliced yellow squash. At only $8.99/lb, this cheese was an absolute steal! All in all, it was a successful evening that gave birth to a new staple in my repertoire of good cheese. Cheers!
